Overnight Oats

The breakfast of breakfasts. Easy to make, simple ingredients, dress it however you want and boom: healthy easy breakfast you can feel good about starting your day with

Ingredients

Scale
  • 1 Cup Rolled Oats
  • 1 Cup Oat Milk (or milk of choice)
  • 1 Cup yogurt flavor of choice
  • 1 Tbsp Chia Seeds
  • Dollop of Honey
  • Fruit/Toppings of choice

Kitchen Utensils Needed:

  • Mixing Bowl (with lid if just for breakfast the next morning)
  • Storage containers with lids (if you are prepping for multiple days. Meal-Prep Containers these are the ones I use)
  • Rubber Spatula

Instructions

Super Simple! Mix all ingredients together and let sit overnight in the fridge. Top with fruit of choice the night before for an easy grab-and-go breakfast. For “crunchy” type toppings that might get soggy overnight, wait to add those in the morning.

If you add toppings in the morning, give your oats a little stir to get the consistency right (sometimes the excess liquid from milk will settle slightly on top), and add your toppings.

Notes

It’s helpful if you have your fruits washed and prepped for easy access. You could put in separate containers if you want to add in the morning. The same method for all other toppings, have them separated and handy for easy topping. The last thing you want to do is make a grab-and-go breakfast but have to dig out and get your toppings prepped the next morning. (Moms this is a great job for your kids to help you with, mine washed and sliced our strawberries 😉 )

Topping Ideas

You can really get creative with this if you want to go super fancy, we usually just top with sliced strawberries or blueberries. Some other yummy fruits you could add are banana slices, raspberries, black berries. Other options include peach slices and a little cinnamon. Sliced or shredded coconut flakes, cacao nibs, shredded almonds or crushed walnuts/pecans, granola, etc. The options are absolutely vast!

If you really wanted to go extra healthy with it you could add some vanilla protein powder to your mix the night before for added protein (may need to add just a bit more milk for the consistency to be right). My squash plants get bountiful fruit before those nasty bugs. 
The rain yields beautiful crops. 
And even if we were to get a late freeze, it’s Texas. It won’t stay long enough to hurt your plants.

Life. It sure does have a way of humbling people. A way of showing who matters. Who truly cares and supports. What is a priority and what isn’t. 
Life seems so long when you’re young. 
Short when you get old. 
The nails, Diet Coke and weekend plans seem so fun. 
Then it’s peace. Peace is fun. 

This man and I have seen some life. Before each other and together. What was important to us 13 years ago and what’s important now are worlds apart. 

But one thing remains the same, we are important to each other. 🩵
47 is off to a great start. I’ve been spring cleaning. My house and my life. 
One day I just looked up and was like “what’s not serving my home, my family or me”. 

We think 50 is half way but it’s not. Average lifespan is 72-73. That makes 36 half way!! 
So by 47, I got to a place that said, I refuse to waste any more time. 

I spent my 20&30s raising babies. I feel like I did an amazing job. I built businesses that have supported me and my family. I found the one who my soul loves. 
I have gone through more than most in a lifetime. I have been to hell and back on more than one occasion. 

Now, this chapter is about peace, happiness., Contentment and what the future holds. 

I refuse to spend any more time on other people’s problems, petty drama, or unrest.
Bless and release is my new mottto. 

I have cleaned out rooms, cabinets, clothes, drawers, decor, the yard and my heart and mind. 

I’m focusing on Jesus first, my husband, my children, my business and the people who walk along side me. Feels amazing! ✝️
